Résumé:
The study concern Pistacia lentiscus oil under environmental- factors in Middle
Mediterranean Mountain, at Bainem and Médéa (Algeria). The object of this work is to
provide technical and scientific references to rural development forest management staff. Oil
is extracted from precious (red) and matures (black). The yield is about 10% for red seeds and
41% for black ones. Fatty acids characterization shows IFG predominance versus SFG, the
ratio is between 3 and 4 regardless the place and seeds maturity. This oil is composed of 44 to
53 % oleic acid. Pedoclimatics parameters show that temperature is very important to plant
development. It has a role in photosynthesis, florescence, pollinisation and transpiration.
Exhibition enhances an oxidative stress altering lipids, pigments and proteins. Soil fertility
contributes to plant growth and improve seeds yield when soil is neutral and alightly
