Abstract

Digestion is the set of mechanical and chemical processes that transform food into absorbable nutrients. It takes place in the digestive tract, from the mouth to the anus, with the help of accessory glands (salivary glands, liver, and pancreas). The small intestine is the main site of nutrient absorption due to its large exchange surface (folds, villi, and microvilli). The colon reabsorbs water and mineral salts, hosts the intestinal microbiota, and allows the formation of feces, which are then eliminated during excretion.
